Curry Crumbed Barramundi

A simple, crispy fish recipe with big flavour

Ingredients:

  • Barramundi fillets (500-600g), skin removed

  • Plain flour (1/2 cup)

  • Curry powder (2-3 tbps, adjust to taste)

  • Salt & Pepper, to season

  • Cooking oil, for shallow frying

Method:

  • Prepare the fish: cut the Barramundi into medium-sized portions, ensuring all skin is removed.

  • Season the flour: In a bowl, combine the flour and curry powder seasoning generously with salt & pepper.

  • Coat the fish: Toss the fish pieces through the curry flour mixture until evenly coated.

  • Cook: Heat a shallow layer of oil in a pan over medium-high heat. Carefully add the fish and cook until golden brown ad crisp, turning once, ensuring the fish is cooked through.

  • Serve: Serve immediately with rice, pickled chillies, onion and fresh lemon.
