Shae Lui’s Cabbage Stew
This is my signature slow cooked & chunky Cabbage Stew packed with smokey ham flavour and tender beef!
Ingredients:
Chuck or Rump beef (600g-800g) diced chunky
Smoked Ham hock
Bacon rashers (2-3) diced
Brown onion (medium-sized) diced
Garlic (4-5 decent sized cloves) fresh and finely chopped/crushed
Ginger (equal amount as garlic) finely grated
Cabbage (half a decent one)
Thyme (fresh or dried)
Bay Leaf
Lancashire RELISH (it’s flavour profile is different to Worcestershire sauce) 20-30mls
Beef Stock powder (to lift the stock flavour) 1 tbsp
water
Salt & Pepper (to taste)
Beef fat offcuts or beef tallow (to use instead of cooking oil) 1-2 tbsp
Method:
Preheat a suitable pot on a high heat and add some beef tallow. Once hot add a handful of beef pieces and begin searing the outside. Turning over searing all sides and then removing into a bowl and setting aside - do this in batches as to not overcrowd the pot or it’ll begin to stew and won’t sear.
Add the diced bacon & onion and begin cooking, once some browning occurs add the garlic & ginger, stir through, cook for a minute or so ensuring it doesn’t burn. (Add some water if it does, it’s fine and will evaporate)
Add the beef back in, stir through, place the ham hock in, Thyme, Bay leaf and top up with water. Add some beef stock powder to “season” the water and the Lancashire relish.
Reduce the heat to low, place a lid on and allow to slow cook for the next 4-5hrs checking every so often to see how it’s going whether it needs more water. Once the ham hock becomes tender you can either shred it or cut it up like I did in the video.
Then in the last 10 minutes add the cabbage and stir through - adding the cabbage at the very end ensures it doesn’t over cook and retains some firmness & fresh colour.
Serve when you’re happy with the cabbage doneness serve up with bowl of rice and a cold drink.
